After travelling the world and working in London, Hong Kong, Sydney and Melbourne, Head Chef Damien Jones has decided to return to his home town of Ballarat to share his knowledge and love of cooking.
Damien’s love and interest in food started early, as child conversations around the dinner table were focused on food and preparation. Like good ingredients coming together to produce beautiful dishes, Damien Jones possesses all the vital ingredients of a world renowned chef. Damien has an impressive resume after holding the position of head chef at Michelin Star Restaurant Nahm in London. He also worked at Bibendum London, then on his return Circa, Melbourne and Darley Street Thai in Sydney.
Damien’s French trained background provides expertise in all areas of cooking and his strong passion for Thai food allows flavours to come to life. Damien puts a strong focus on utilising local produce in his cooking, including the use of wines both local and further abroad to compliment his impressive dishes. Damien brings the concept of shared-plate food to the Lydiard Wine Bar, allowing guests to experience tasting pleasure with a selection of dishes from his kitchen.
Damien’s innovative dishes are extremely adaptable to all aspects of enjoying food, whether it be shared plate style dining, weddings, conferences, cocktail parties or board meetings.
